The Copán region, in western Honduras, is particularly celebrated for its rich
coffee-growing heritage and exceptional production conditions. Situated at high
altitudes ranging from 1,000 to 1,680 m.a.s.l, Copán benefits from cool
temperatures that promote the slow and even development of coffee cherries. The
region's volcanic soils, rich in nutrients, and ample rainfall throughout the year
contribute to the complexity and quality of Copán coffee.
These favorable geographic and climatic factors make Honduras an ideal
environment for cultivating Arabica coffee varieties, prized for their delicate aroma
and flavor. In Copán, coffee farmers have perfected traditional cultivation
techniques, preserving biodiversity and ensuring a sustainable coffee farming.
This lot was sourced from La Capuquitas Farm, one of the seven farms
of Urquija family, located at 1100 m.a.s.l. Coffee undergoes a meticulous quality
process. The farm's team carefully selects the best cherries from the harvest and
then passes through a rigorous sorting process to remove any faulty or unripe
fruit.
The coffee is de-pulped using an eco-friendly pulper powered by an electric motor,
minimizing water usage. After de-pulping, the coffee with attached mucilage is
placed in a washing channel to remove the mucilage completely. The coffee is then
transported to concrete patios for sun-drying until its moisture content is reduced
to 51%. Finally, it is moved to mechanical dryers for 36 hours to achieve the ideal
moisture level.
The Urquija family is deeply committed to environmental sustainability. Their
practices include a water treatment system to clean the water used in their
washing station and the production of organic fertilizer for their coffee plantations.
La Capuquitas Farm is certified by both Organic and Rainforest Alliance,
demonstrating their dedication to sustainable and ethical coffee production.
